If dirty/ clean diets don't matter so long as you meet your calorie/ protein targets, why do the Veeky Forums diet guides tell you to not eat processed food and to prepare everything yourself?

Its not just protein, its your macros as a whole. Even without taking into account micronutrients, vitamins etc its much easier to have a good ratio of carbs/fat/protein with a clean diet. Most processed foods are high in fat

because they do matter for your digestion, bodily functions, brain, organs, performance etc. calories in calories out is literally just for your weight. not bf% but total body mass. even for that it's a bit of an oversimplification/exaggeration but it gets an important point across about the importance of your diet
