>uncover and turn broiler on for 2 more minutes
Only reason I posted the whole recipe is because I got tired of the spices either pouring off due to juices escaping from baking/frying covered, or burning onto the chicken due to direct heat. If you cook each side of the breast, then leave small gaps for moisture to escape when baking covered, you get the perfect texture and no spice loss while the chicken is still joocy, plus the oil stops the chicken from drying out.
I love all those mixes, i just dance between them all, im too lazy to add more than 2 seasonings

I just discovered it, and now truly appreciate the grill option in an oven. OH MY GOD does it just keep all the juices in the breast. Whenever I use bake it dries it out too much.

My thighs under the broiler/griller/salamander do great at medium temps but it will wash off any pan sear when you turn em.
Also when I slow cook my spatchcock whole chicken in the fan forced oven it stays very juicy so long as I baste it with olive oil often (135C/275F for 60 mins). But I do buy the one's already brined.
I made this yesterday just the chicken without all the other shit around it, taste good as fuck. I dont get why he would season the breadcrumbs instead of just the chicken before the flour though.
For schnitzels I season the breast, the flour, the eggwash and the crumbs. I have no idea which part is best to season so I just do I little everywhere. He may have been working with brined chicken.

I have this baked potato spice mix. I have no idea what's in it but I put it in my chicken/rice mix and it tastes godly. I also cook my chicken in a couple of grams of butter and than add 1g per 10g of uncooked rice to it and stirr it all in the pan. Butter makes everything better.

Put in a can of tomato paste and spread it around each piece to fully cover it. Add more olive oil if you are having trouble.
