The important thing to do is emphasize actual mobility work in addition to stretches. I couldn't touch my knees either and now 16 months later my fingers can touch the floor and the mobility of my upper back is fixed.

Maintenance is different, if you can already touch your toes, you can do that everyday, but if you are working towards mobility, like trying to do splits, stretching for it everyday you will just overstretch.
It's super easy to fuck up during a stretch and snap your shit, connective tissue is easiest to rek.

Every time I look at myself in the mirror (in the bathroom, at the gym, after a shower, etc.) I would make it a point to correct my posture. I would try to stay aware of it as much as possible.

Eventually, it started feeling more natural to stand up straight.

As for flexibility, after each workout I just work on it. Toe reaches (sitting and standing), the thing where you bring the bottom of your feet together and pull it towards yourself, working the sciatic nerve, etc. After a few weeks you'll notice some gainz.
