Remove upright rows. Not considered a valid exercise anymore because it fucks your joints
well yeah. they hit all the shoulder heads. you don't need to do 2 separate exercises that hit the same muscle because it's pointless.
sets and reps depend. lots of volume. for ohp and lat raises something like 3-5x8-15. for face pulls you need lower weight so do a bit more reps like 3-5x20-25.
word of advice for lat raises: never go as high as your shoulders allow you because you will be causing impingement. unless you rotate your shoulders outwards when you raise your hands (lu raise) you should always stop short before reaching the end of ROM.
behind the neck presses are also really good and safe if you do them properly
OHP, low reps
Circus Dumbell Press, low reps
Dumbell OHP, higher reps
Facepull for them security higher reps
Lateral raises higher reps

Yeah that's assuming you have adequate shoulder mobility to do them. If you don't, they will destroy your shoulders at least in the long term.

Exactly what I do shoulder day. I alternate between OHP and military press and Arnold/dumbbell press. I also do upright rows with cables. Drop setting bent over rows is GOAT.Sometimes I add face pulls at the end of my workout.
