What kind of routine, and more importantly, diet would you recommend?

Never ever bulk. Do a lot of cardio with resistance training. Basically a soccer/football player's body.
Eat at a deficit.
Do 2 hours of abs 6 days a week.
Makes sense, but this guy's fat, which is kind of weird since he probably runs 10 miles in a single match.
This doesn't sound hard, but it would be pretty bad for muscle fiber after a while.
Also, I read somewhere that Lee ate a lot, but it was only protein, he completely cut carbohydrates from his diet, don't know if it's true, though.
