Canola or make sure to get refined coconut oil. Ive researched it not long ago and refined has a smoke point of like 345 while virgin coconut oil is around 250, making it unsuitable for frying.

Coconut should not be used for frying since its burn temperature is so low all the good qualities of the oil will be lost due to the heat and it becomes more carcinogenic
