I've done it a few times but I can never sleep when I'm on it. Now I just avoid carbs during the day but have a bunch at night so i sleep well.

There are absolutely 0 long-term studies on the effects of the 'modern' diet. What you're eating right now is very different from mainstream food 20 years ago. Meanwhile people are getting fatter. If anything, by following a normal diet, you're taking part in an experiment of which all indications are that it's bad for you.

Ketofag here. Yeah it seems pretty effective. Lost about 80lbs on a balanced diet, started to plateau so decided to try the keto. Down to 103lbs gone so far and to be honest, it's making a nice change in eating habits.
First few days kinda suck. The keto flu thing is real, felt drained and literally ready to collapse after day 3 (also 12 hour shift which probably didn't help).
After that though, good! Sleep seems better, appetite is always like a monster in the morning - but black coffee and gallons of water help - and then after that, my appetite is so low for the rest of the day that I have to make myself eat.
When I do though - (I stick to about 1500 calories a day) damn, it's satisfying. Bacon, eggs, mushrooms cooked in butter, steak, chilli (no onions sadly cos too many carbs) etc. It's pretty fucking nice!
I know there's reports out there about the negatives and I'm aware of them, but the positives seem to outweigh the downsides. Also, I've done 1 cheat week (holiday) back on carbs and a few days where something non weight-related got me depressed as fuck and I just didn't give a fuck and each time, bouncing back wasn't that hard.
So yeah, recommended. Oh and it works great with IF (I've even done a few 24 hour fasts without too much difficulty) so that helps too if you're trying to dump weight.

That's exactly why lazy people live keto, they think those simple rules describe all nutritional info they'll need. In reality people lose weight because they're cutting out entire good groups that they used to gorge themselves on; eating less means less calories. Same reason fasting works, you're just not physically eating like you used to

I found that correctly supplementing magnesium helped with constipation. And Idk if it's the magnesium or the diet in general but I am getting restful sleep for the first time since I started puberty. 5-6 hours and I wake up feeling awake. Normally I could sleep 9+ hours and still feel exhausted when I wake up. It's amazing. I don't even need to lose weight and I ate a very "healthy" med-style diet before. I have so much more energy now.

I somewhat agree with you on the 2nd part, but you confuse the modernization of our food system (fastfood, pre packaged meals, processed foods and convenience foods) vs better availability of fresh produce. The modern diet using the Western diet as a proxy has been very very well studied, but whats tricky is defining what that is. We just usually assumed its a lot of processed crap. Fruits veg and grains will not kill you (unless you got some underlying condition/allergy).
On that second point you highlight, most of that would come from plant matter still. More fat and protein can simply mean they eat more while grains/seeds/nuts etc, the nutritional profile of what they eat is hardly a useful indicator. The Okinawan diet which was credited to the people’s longivity was heavy on sweet potatoes. Of course no one from that area eats that way anymore, while their life spans have “normalized” to be comparable to the rest of the Japanese population
