Their massed spears would suffer greatly from poisoned arrows, but it would repel any Malian cavalry. Meanwhile, the thin lines of skirmishers would fall under the hooves of a Carolingian cavalry charge.

Most of sub-sahan africa was iron age by around 500 AD, give or take about 200 years. And agriculture/pastoralism was around even longer.

Its hard to say but probably the Carolingian empire because they had more experience fighting other professional armies from neighbouring kingdoms while most of Mali's enemies were Mossi horsesmen raiders and desert Tuaregs. When Mali did come face to face with another state the Songhai they pretty much got goomba stomped by Sonni Ali.

Carolingian Empire would win unless Mali had a huge advantage, like defending from a superior position or fighting on their home terrain.
