Dude, use a large iron skillet and turn the fire down low.
Use a good amount of oil or butter.
It takes seconds to cook an omelette.
put the ingredients in at the exact same time you put the eggs in. Like moments after.

Wait for the omelet to "fully cook".
Take it out while it's still kind of slimy and let the heat from the omlete itself finish the job of cooking it.

I find that mixing veg in with the egg apriori is a recipe for soggy omelettes as well. Much prefer to make a crepe like thing with veggies that can cook quickly like tomatoes, spinach, red onion, mushrooms.
