Frozen vs Fresh

Is frozen food shittier i.e. less nutrient dense than fresh? What does Veeky Forums eat?

Unless you have a source of freshly picked veg (hours not days) frozen is always going to be better.

The difference is probably negligible.

Frozen veg is flash frozen on the spot so it's probably fresher than "fresh" vegetables you pick up from your grocery store that have 5000 miles on them

For certain vegetables the freezing process also makes them sweeter. Some chemical process happens that adds sugar content.

I will say though, I find frozen veggies taste fucking shit compared to 'fresh'. Everything just feels super watery, I don't know where I am going wrong with the cooking, but it feels like all of my frozen veg has extra 'intracellular' water (probably the wrong word but basically it feels like everything burst when you eat it and water comes out and everything just tastes like fucking water). Only buy fresh because I find better taste and texture, in terms of nutrients...who really gives a fuck, I'd imagine the difference is negligible and if you're eating right anyway you should be getting enough of what you need.

Water expands and destroys cellular walls when it's frozen, so that might be why.

Frozen vegetables are blanched so some nutritional value is lost, negligible but still. From blancher to freezer is minutes.

That's incorrect for most vegetables, they are frozen very quickly but could be up to a day from harvest to freeze.

Some are salt water graded like peas, some things like cauliflower use citric acid to whiten.

They don't actually know, or they are reading marketing wank.

It's because they are blanched in water and/or steam then cooled with water and/or air then frozen.

For nutritional value I've been told its negligible but I'm not sure what the difference is. The point of the blanching is to kill any bacteria on the vegetable not to cook it so the do it pretty quick.

The fresh vegetables in the store have probably been sitting around after harvest longer because transportation through middle men to a store. Probably the same or less for local but it depends how long its been sitting in the store. Where I work its usually its a less then 2 hours but I've seen less than 12 hours before they're frozen and that was because breakdown.

For to the store most fresh vegetables are transported chilled, some use nitrogen gas surrounding instead of air to keep it fresher like lettuce.

Really the only way to have really fresh vegetables is to have a garden. I think its all fine.

Its frozen it should be the same if its frozen in a blaster. It just dosent taste as good.

Frozen vegetables are fucking awesome. You can buy in bulk, they're generally actually fresher than non-frozen veggies, and they never go bad.
That being said, all I usually do with my frozen veggies is steam them. And I don't care all that much about taste. But mix in some salt and a little bit of butter and those steamed veggies taste pretty alright.

I usually eat one whole bag a day for breakfast. Costs a buck.

legumes are linked to longevity and a lot of health benefits. Just like everything, moderation is key. Also grains aren't as bad as people make them out to be. It's the overly processed shit covered in DEET that is a problem.

Agree with the rest. Paleo isn't as perfect as people make it out to be.

Frozen food usually contains more vitamins than fresh food. Frozen food is usually vegetables that have just been picked, and they kept their vitamins, while fresh food most often stays in the open for days, and vitamins just disappear for whatever reason quite quickly. Look it up, that's true.
