I eat less than 1000 calories per day and slowly losing weight. What's the best excercise to accompany a near fasting diet? Swimming pool?
I can't handle boring, repetitive training like lifting and running destroys my knees.

You've answered your own question, swimming is ideal exercise for recovering fatties.
Lifting would have limited value on so few calories anyway .

You are not even close. You are going to damage your metabolism if you keep eating like that and training, and also will loose more muscle than fat.
Fasting means not eating at all, and wont cause that damage (if you follow some guidelines). So don“t compare eating less to Fasting.

I work while standing and this alone takes a huge toll on my legs.

Swimming and biking are great if you're still too heavy for high impact cardio. Obviously swimming is better in winter, but stationary bikes are good on occasion too if you don't get too bored with them. I'm lucky enough to live next to mountains so I do a ton of hiking and sometimes snowshoeing. You'll feel some ache in your joints at first if you're fat, but then you'll build those important muscles to stabilize your lower body and the joint aches will turn into normal soreness on longer hikes. Hiking (at a decent pace with a backpack) also burns more calories than running, plus the sights keep you coming back as opposed to running on a treadmill. Swimming burns about as many calories as hiking and it gives you a full body workout and is the best low impact cardio you can do. It's best to do a variety of cardio exercises so you don't get bored during the winter.
