The principals of gaining strength and muscle mass revolve around progressive overload and adaption to the stimuli.

Basically; increase the stimulus intensity just as the body becomes better suited to the previous work load to get hench.

If you don't have the neuromuscular control to do free-weight compound lifts you should try to compensate using machines that operate on a fixed range of motion. Just because you use machines it doesn't mean you have to limit yourself to 200lbs, there are other machines that allow you to use weight plates and lift more than what the standard crappy machines use.
