I like them varied. I know it's a non-answer, but it's the only one I can give.

Some of the beast races are closer to humanity, and some of them are rather more alien or weird in mindset. A dog-person or wolf-person is always going to be more easy to relate for a human than a merfolk. This doesn't mean that there aren't friendships or commerce or the like, though. It just leads to the occassional culture clash.

I do generally have them fairly beastly, though. None of this "dog ears on perfectly human dude" thing. You're an ox-man? Then you're basically a small, swole minotaur, bro. Milk that for all it's worth!

In general, though, I try to make them people. People of varying degrees of weird, but people.

I don't mind anything on that scale, as long as it fits the game world in a way that isn't exempt from common sense.

Grade 4. Still basically animals, but they can walk, talk, and hold stuff.

I do them short and cute. Something like 2 or 3.
Started as a background characters. Players were... wary of them, to say the least.

Minimal interaction. Then an NPC companion was introduced. Still a minor role.
Took me one and a half a year but I finally got the fuckers. Players, I mean. One of them is now fine with flirting with them critters.
I am now 100% sure I can manipulate my players' fetishes. I already made one fucker like traps once, I can make the other one like furries.

Personally, I've always felt that it should depend on what the group is comfortable with, and how mature enough you are to not sexualize them like a creep.

As for My personal tastes, I find furry, mimi, and rubber forehead ayy to be boring. If I'm going to bother putting in non-human races, I want them to actually appear unique and interesting in their own right. Afterall, humans don't look like chimps or bonobos, so why should the races look exactly like either humans or animals?

And that's IF I bother putting in nonhumans in the first place.

Pic related is where I draw the line for sexy animal people, but I also use animal races that are basically bipedal versions of animals (and not sexy, unless you find swole crocodiles or yaks to be sexy). Tauric races are also OK most of the time..

There's a whole other scale this picture fails to represent. It's going near maximum cuteness and the furry race at every stage of this only has its features FOR the cuteness. They range greatly.
Some are animals that talk, some are animal people, some are humans with animal ears.

Generic races are boring, I'd rather see insectoid or crustacean or amphibian or really just anything that isn't cat/dog/fox/wolf garbage.

I don't like races that are straight up "A specific animal but like a human", so anything like Dog-people, cat-people etc is out. Lizardmen are usually fine since they seldom are designed after a specific animal. For a mammalian counterpart, wookies are a good example.

I take the George Lucas/Rick & Morty approach to races -- there are a handful of species that you see over and over, like humans, elves, orcs and dwarves, but there's an eclectic mix of other monsters whose species you never learn about, because it would be too time consuming and inappropriate to catalogue them all.

Personalities are generally that of the animal except with sapience and primitive human intelligence.

I love beast races! They're fun to include in most games, and I usually have two or three varieties in every fantasy campaign I run. They're just universally evil in my main campaign setting, and not available to PCs. The body and soul are connected in-universe, and permanent physical transformations cause you to lose your 'humanity' and free will. Shape-shifting is likewise very dangerous because you can get stuck with the mind and soul of whatever you turn yourself into. So, the beast races (like kobolds and gnolls) are essentially soulless monsters that follow their base instincts blindly.
