We'll tease her out the entire time, seemingly "kill" her (if you waifu'd someone else) or both of you off (if you desperately thought you'd be able to get with her if you stuck with it long enough) and other choices you make in the game. And just as the credits end theres a slight hint that she/both of you survive to REALLY drive up the sequel sales because monstergirls have rabid fans and niggas want to fertilize her eggs.

The bandits were followers of her religion, which glorifies strength and freedom, by having it's disciples take what they want by force. She's starting to have second thoughts of it, or maybe she's contacted by her god and told at some point some priest of the religion started using the tenets as an excuse for robbing people, so now she's doing what she can to help people.
