I always use one of these round things in the bottom of the oil because if one of the pieces of chicken rest on the bottom for even two minutes it might leave a burnt spot.

Keeps the coating lighter and crunchier. If I have any yolk in it or whip it for too long the crust comes out hard and a lot of it cracks off.
