I don't have leftover food because I cook as much as I need.

Form it into balls, flour, egg, bread crumb, stick it in the fridge to set, deep fry it, eat with buffalo sauce and blue cheese.

Or just microwave it. It really depends on the type of macaroni and cheese. I make I baked one that's so cheesy It's perfectly fine to eat cold the next day.

I've found this to be less reliable if you've used flour when making it but it still works.
