This question has legit troubled me for awhile, it must be something with the way they somehow always seem to be served at room temperature, like the whites are too rubbery and the yolks are always underseasoned and have a terrible consistency. There has yet to be a time where I gave said, "I'm glad I tried those deviled eggs."

and not sprinkling a little smoked paprika on top is unforgivable.

I make them for holidays and while I dont bother putting the filling in a pastry bag to give a pretty star shape the filling is pretty much the same.
they have never turned out like the OP image, I dunno what would cause them to look like chunky vomit but I would assume I fucked up really bad if that happened.

There is nothing wrong with deviled eggs.
mash yolks, add mayo, add bacon that has been through a good processor until it is a smooth cream, add a little lemon for acidity.
use a ziplock bag with a corner cut off and a piping tip and pipe those eggs.
top with paprika and/or a slice of pimento stuff green olive.

If you are interested in trying it.. here is the proportions i use:
a dozen eggs
3 T of mayo
about 3/4 of a bag of real bacon pieces (the oscar meyer shit from the salad isle) if you use real bacon you can reserve some nice looking pieces for garnish - but you should use less actual bacon as the taste from real fresh cooked bacon will be far more powerful.
and then.. about a quarter of a lemon.. i like a little more than that but a lot of people don't like the lemon taste to come through...
I have never tried zest.. but i might try that as a garnish next time too.
the trick with the bacon is to send it through a food processor till it is sludge so that the eggs remain smooth. i like to process the bacon, then add the yolks and lemon and process more... this gets the mix totally smooth. i add the mayo and mixthe mayo in by hand because the food processor will cause the mayo to separate or get oily and "break."
I love it, especially when you can get a sweeter mayo than can balance out the astringent bitterness of the eggs

A touch of dijon
Top with paprika and a sprig of dill.

OP here, no no, I love deviled eggs, I just saw some dude ranting about them and wanted to know what Veeky Forums thought was wrong, if anything
I steam the eggs in a rice cooker. For some reason that gives them a nice consistency.
For the filling I use:
apple cider vinegar
sweet relish
house seasoning (black pepper, granulated garlic, sea salt)
Mayo
Yellow mustard
minced onion
paprika
then I let everything sit for a bit and then top with a little paprika when I fill them.
Eggs alone are terrible for you. Full of saturated fat and cholesterol.
Add salt, mayo etc and you've purchased a one-way ticket into heart attack town
