Why don't you fridge onions before the chop? Makes the vapors less aggressive.
Why would you have leftover chopped onions?
If you only need a little then just chop part of the onion instead of the whole thing. A partially cut onion will keep longer than one that's been fully chopped. It's also more useful since you could chop part of it and then slice the rest, for example.

From a restaurant standpoint - yes, anything "opened" must be refrigerated, and disposed of in a certain period of time.
From a home-cooking standpoint - why are you chopping onions you aren't using?

If I only use half an onion, yeah, I stick the remainder in the fridge.
As for green onions or leeks, I actually plant them in a pot and chop the tops off when I need some. Same with butter lettuce, cilantro, basil, rosemary, dill, and oregano.

I do it all the time and they work fine. If you leave them in the refrigerator a few months, you might have problems.
And one added advantage to refrigerating onions is that it makes far easier on your eyes to slice them.
