just grind up some tacos in a blender or food processor and add water to make it more soupy.

you could also add chicken stock in place of water to make it more flavorful.

Ok, I'm back finally.

Chicken Taco Soup:

1 large onion, chopped
1 poblano pepper, chopped
2 cloves garlic, minced
2 cans of "chili" beans (I use Ranch Style Beans)
2 canned diced tomatoes with green chilies (Ro-tel)
8 ounces tomato puree (not paste)
1 12 ounce can or bottle of beer (you can use chicken broth if you don't want to use beer)
3 chicken breasts or 4 thighs (cooked) (I like to use a combination of breast and thigh meat and I marinate and grill the chicken, for better flavor)
Taco Seasoning to taste (recipe to follow)
Toppings: shredded cheese
chopped cilantro leaves
tortilla chips or strips
sour cream or crema
hot sauce

Taco Seasoning mix: (You can adjust any of this to suit your tastes)
1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 teaspoon sea salt
1 teaspoon black pepper

To make the soup: saute the onions and poblano in the fat of your choice until soft and starting to brown. Add garlic and saute till fragrant. Add all the other ingredients besides the cooked chicken and the toppings and let the soup simmer on low, covered, for 45 minutes to let the flavors develop. Add the cooked chicken and let simmer another 15 minutes. Serve with whatever toppings you like. You can also make this in a crockpot, but IMO the flavors blend better on the stovetop.
