If reality is a simulation, then it would save computing power not to render the parts that aren't currently being observed. Our computer simulations (ie video games) do the same thing. In a game, anything you're not directly looking at, doesn't really exist in the game.

I dont know why the photons affects the electron the way it does, but its not because a human eyeball is looking at the electrons as they pass through the slits.
