I figure the same way you have XY woman. Some people can be born a man but be phenotypically a woman. See Swyer syndrome. As far as race it would involve changing specific genes for specific phenotypes to be expressed. We don't have the technology yet because it requires large scale gene changes but I can't see why it isn't theoretically possible.
