Season with salt and pepper, fry in a pan with a few cloves of garlic and a winter herb (thyme, rosemary, sage, whatever you have). At the end baste with butter and deglaze the pan with white wine.

You don't have to do all of these everytime, e.g. feel free to leave out the wine if you don't have it or don't like it or whatever. The fresh herbs make it more expensive, but you can leave them out, use dried or grow them yourself.

Pic related, with fried potatoes and some raw bell pepper, (you can also add vegetables such as peppers it in the end and roast them off in the juices, but I felt like eating it uncooked in that instance).

lately my favourite recipe, it only uses one pan, takes 15 minutes and all ingredients are cheap and most of them you should have them at home anyway

Mix cornflour, salt & spices. Coat the chicken. Put it on a panini press till cooked. Done.

If youre making rice anyways, why not just make a teryaki stir fry?
