Moules-frites cook along

Let's make some moules-frites with some dipping sauces!

Going to start by cutting up some russet potatoes and soaking them in water for a bit

For my first dipping sauce I'm gonna start by mincing some red and green peppers

Lemme go cry for a while from these shallots ...

Yeah boiiiiiiii!

Just put in some herbs for dip 1. Some parsley and some thyme.

Finished off dip 1 with about half a cup of mayo, 2 cloves of garlic half a lemon, some salt and some white pepper! Now onto dip number 2.

Roasting some garlic now, and in the mean time getting the potatoes dry for their first fry

This looks great. I'm landlocked and thus I distrust my local shellfish.

Just put some chipotle peppers with some adobo sauce in with some mayo. Once the garlic is done then it's going straight in and boom sauce 2 done! Didn't take out any seeds so we'll see how spicy these peppers happen to be.. adventure!

As an after thought I decided to add some cilatro and lime to the chipotle and roasted garlic mayo dip. Definitely a good addition and I'm glad my upstairs neighbours let me grab herbs from their garden

I want in on that sauce.

I love this combo but I've only ever had it while in Belgium, apparently it's something of a national dish over there. Where you from OP?

I'm actually from Toronto. For the summer I'm working a part time job, so to keep myself busy on my days off I'm trying out making different recipes and national dishes from around the world. So today is Belgium! I've also make stuff from Thailand, Vietnam, Japan, South Korea, Phillipines, India and Bangladesh so far.

In with the cream and some beer! I didn't have a huge selection of belgian beer so I went with hoegaarden.

Second round of frying while the mussels are steaming!

Those are burnt. Your first fry should blanch fries for 4-5 minutes WITHOUT getting any color. You already had too much color on first fry, so now you have burnt potato sticks. feels bad man

The second batch of fries turned out much better. But now the mussels are done!

Looks good. I'd really like to try that chipotle dip. Generally I like mussels in a garlic white wine steam, but the beer should work good to. Don't let that steam liquid go to waste, I like to spoon it up with an empty mussel shell like soup.

Thanks! And that's exactly what I did! I've made mussels with a white whine sauce once before. I saw this variation online and thought I'd give it a try. I actually really liked the hoegaarden with the mussles. It gave it a nice subtle citrus undertone. The chipotle sauce turned out well too. Definitely would make this again.
