Depends entirely on your abilities. You could become a high ranking official, or a work as a cog of some bloated bureacracy. EU has plenty of polsci shmucks earning decent wages. If you are compelling and smart enough you can even write books.

As with most "useless" majors if you end up actually working your ass off and are super passionate about it, you can land a decent job. Most likely in a large city working for a national publication. You won't make big bucks, but a decent living.
This doesn't happen often, so I guess you can say overall it's mostly low tiers level.
