Why should sexuality be defined as something binary when it's clearly way more complex? The point was that people typically don't consider it what it actually is, not that sexuality actually being a spectrum is tied to the idea of gender being one as well.
Using the correct distinctions between the words 'sex' and 'gender,' it's a pretty obvious observation that sex is static, considering it's just which role your body naturally has in the reproductive cycle (with hermaphrodites being a rare exception,) but gender is, in part, arbitrarily defined by society at large. First by biology, and then by society. Whether it's useful or harmful to acknowledge this or give them thousands of pointless names is a different topic, but it really is arbitrary, hence how men and women can fill different so-called "gender roles" based on which era and society they're existing in, with some cultures having explicitly stated third genders, which are useful to let people of a sex not normally expected to do a job, do that job without being attacked by everyone else for being not normal. Obviously men and women are physically built to suit specific roles, but there is nothing stopping you from doing something outside the normal expectation. That is where the 'gender as a spectrum' idea comes from.
So this leads into an obvious question: Doesn't gender lose meaning if it can be defined on an individual basis, and shouldn't we just classify people by sex rather than gender, especially in science, if the idea of gender as a spectrum continues gaining traction? And of course, the answer is yes, because gender as a spectrum means everyone is an individual and the label of the gender you have is only relevant to you, the individual.
