Simple answer: living things CAN and DO evolve, but don't HAVE to evolve if they can thrive in their ecological niche as they are. It is the destruction of the ecological niches that is leading to extinction as the destruction is happening much faster than evolution can adapt, if it even can depending on the amount of destruction.

Are you talking about evolutionary pressure from all the crazy exploits of humans? Evolution happens on HUGE timescales and depends on the rate a thing reproduces at. This is why we hear so much about superviruses and whatnot evolving to match our medical innovations, viruses and bacteria reproduce far faster than bugs and plants in orders of magnitude.
There are at least some non-bacterial examples, though. Bed bugs in New York have apparently developed an immunity to pesticide, so bed bugs are recently a problem again, and similarly the Algerian mouse has also developed an immunity to common mouse pesticides.

You are misunderstanding what "evolutionary pressure" does. The "fittest" for one environment might be radically different than that of another. Is a tiger more fit than a penguin? Not in antarctica it isn't!
Also, evolution tends to work with groups of species, not just one at a time. Mammals can't live without plants, so mammals that kill all the plants won't survive. Mammals that help spread vegetation will do much better in the long run. If you are a plant, and the humans like your seeds, they are going to plant you all over the world! Inter-species cooperation is highly successful.
Bugs are thriving because humans have made fast-changing environments and bugs, with their short lifespans, can adapt well to that. Whatever works, thrives.
Meanwhile, humans risk turning the Earth into something unable to support human life. Life forms that destroy their own environment won't survive.

Life doesn't exist to evolve into a niche. Life exists to reproduce. If the reproduction is successful, it passes on those traits. If it goes on long enough, traits beneficial to survival become emphasized. You can't tell me "bugs suck at survivial" if they keep reproducing. By definition they do not suck at survival there.
Also bugs and vegetation reproduce at rates you can't comprehend. We also intentionally cultivate vegetation. I guess if your OP had examples of bugs being "genocided left and right" there might be something to discuss.
