The main problem is that it's used poorly to substitute meat in such a way that usually just highlights how beans are different from cow.
You need to treat it like a totally different ingredient, not just like a shoe-in for chicken breast in your shitty low calorie dinner.

I like very cold tofu that has sliced century egg on top sprinkled with scallions and bonito flakes topped by syrupy oyster sauce.
The only fried tofu I like is stinky tofu, though.
I just wish I found a restaurant that made the stinky tofu with a more crunchier fried skin.

If you want western-ish, you can dredge thin slices of dried tofu in potato starch (a little will still stick) and then grill or panfry wrapped in bacon. A skewer will help hold it together.

Just started eating it. It's not bad, but I'm probably not going to do any major recipes using it. I'm eating it now only as part of a diet. I can't imagine using it as a substitute for real meat.
I mainly just fry it and slice it. Goes good with tomato soup.
I use it from time to time. I like black pepper tofu or slicing it very thin so it has a crispy texture and eat it like huevos con chorizo

Since the base of the dish is thoroughly browned pork, maybe sub it out with tempeh or some other meat substitute that can be minced finely and will brown when sauteed for a while. Then just add your douban jiang, plus hot oil, and lightly ground sichuan peppercorns and rough chopped garlic/grated ginger. Once it begins for form a fond, add some water plus some corn starch mixed with equal parts water. Thicken to your preferred consistency, chuck in silken tofu chunks and simmer until the tofu absorbs some of the sauce flavours.
Cornstarch is really just a concession to the cheapfags who don't want to use concentrated pork bone broth. Why it continues to be suggested in the standard recipes is beyond me.
Asian tofu is extremely good. Especially the deep fried varieties such as atsuage or dou pao. Those make me crazy.
However the ones sold by vegans/organic stores are disgusting.
Cornstarch is a staple item in nearly all Chinese recipes for a couple reasons. One, to thicken up a sauce when you don't have literally a whole day to make a pork demi-glace, and two to tenderize meats when used with baking soda.
I mean, if you're desperate -- a gelatin packet would suffice, but I don't get what's so wrong with using a thickening agent.
