Their methodologies, their philosophical vocabulary/concepts, the issues they discussed, in short their whole approach to epistemological, metaphysical and ontological questions shaped western thought for centuries - and still do.

So no we don't start with the Greeks to blindly follow their explanations, but because you cannot understand western thought without this intellectual legacy.

That being said, given that Western education is predicated heavily on the core intellectual concepts of the greater Greek historians and philosophers, it seems unnecessary to start at square one for the majority of texts. While a reader may miss blatant references to the Greeks, they are unlikely to strongly misinterpret or otherwise fail to understand the meaning behind most works of Western Canon provided they have even a highschool education.

I'm not disagreeing with you, but asking these people to admit just how useless and irrelevant greek philosophy is would be asking them to admit that the one thing they can take solace in and be proud of in their otherwise empty and unhappy lives, is a giant masturbatory waste of time.
