This is a technique that painters have been using for hundreds of years.
If we take an object who's color we are familiar with, we will still recognize it as that color even if it is in shadow or colored light.
It's probably a similar pattern recognition to why we can understand a language in all sorts of different accents.

"Red pixels" doesn't mean "any pixels with with a nonzero R value." By your definition of "red" almost every color on this chart is "red." You're confusing pixels with subpixels basically.
