Oven roasted a chicken, but I know I won't be able to eat the whole thing before it goes bad. It's cool to freeze the leftovers, right? Also, what are some good recipes to use the leftover chicken in?

You can try using the leftover chicken to make a soup. Take it further and make chicken jelly, put it in the refrigerator at night and in the morning take it out. Except that works best with pork

Another recipe I have is simply take the chicken, tear it into strips, add tomatoes, cucumber, salad, grate some carrots and cheese then some tartare sauce (its the one used for fish sometimes). You can live off that for a long time

Cut up the chicken this morning and have it in a spicy buttermilk marinade for a few more hours. Its gonna be so good. Gonna try a double coat tonight.

I've never seen that recommended. Normally it's 20-25 minutes/lb at 400F. I roast with a dutch oven and for a typical 5 lb brined chicken I'll do 50 minutes covered and 50 minutes uncovered. Usually it's @165F internal at that point and never dry.

debone it next time. The amounts of golden crust will make your time worth it.
