Sauteed/fried whatever. You want a little puddle of olive oil and slivers of garlic cooked in it on medium heat until they are a light golden color. They never come out bitter. Pedantic cunt.

A real chef prepares years in advance by selecting the environment. It is the little things like the soil and weather that dramatically change the flavors of the potatoes that you make the chips with. And these thing get even more pronounced with meats.
