When you buy tofu it comes packed with water. It's necessary to drain it if you don't want it tasting like crap. You can press the water out by wrapping it in cloth or paper towels, and leaving a heavy plate in top for 30-60 minutes. Alternatively, you're able to freeze the tofu overnight, thaw it out and squeeze the excess water out with your hands, this creates a superior texture. The ice expands inside the tofu creating larger holes on the inside, giving it a "chicken nugget" type texture, this is also what let's you squeeze the water out without breaking the block. Pressed tofu is more rubbery.

They don't like the effects the meat and animal products have on the animals, environment, and their health. They didn't stop eating the meat because it tasted bad, they stopped for said reasons above, but still like the taste of those products. Mock animal products allow them to enjoy the tastes they used too while not having the negative effects the actual products have.
Honestly, I dont care about ethics and animals in general but I do care about environment.
I also care about health so my diet has always been mostly veggies and fruits, just that now I use grains/legumes/beans as a protein source and not any form of animal product. I dont like drinking cow milk (honestly.. its estrogen juice, just think about it), I never liked eggs, I never liked any form of meat from pigs (except crispy bacon ofc), I honestly just liked chicken so it was easier for me to transition.
