When I was a kid I would mix celery salt and Worcester sauce into the beef before cooking. It was delicious!

Now I’m Patty Melt all the way:
Toasted Rye top
Cheese (Swiss or sometimes shitty American for melty pleasure)
Grilled onions
Medium rare patty
Toasted rye bottom
*in diners I’ll use ketchup for both the fries and patty melt, otherwise I never use ketchup

i want to cook salmon with broccoli, onions, and asparagus.
is it ok to fry the veggies all in the same pan? or am i supposed to cook them separate

Personally I'd cook them in separate pans since they all cook at different times, but you could also tier them, cooking broccoli first, adding onions, then adding asparagus.

Saute your onions first, then add the broccoli florets. Once they've achieved a bright green color and are crisp-tender, add your asparagus, since it takes the least amount of cooking time.

Nah, you can do it user, it's not hard, it's just timing. Don't be afraid to taste as you go to test for doneness.

Looks tasty, but all veggies should be above the patty. Also, the patty is way too thick. You should be able to take a bite without dislocating your jaw.

Bit of peanut oil in a frying pan, add patty (beef mince shaped with thyme or something, no egg), high heat, cook on both sides, lid on while cooking.

I do toppings like a whopper from burger king.

I like to do 50/50 ground venison and Italian sausage (the latter to get the fat content up a bit since the venison is so lean). Boar bacon is best and I prefer a spicy cheese like pepper jack or chipotle gouda. I like a firmer bun but nothing too crusty. If I'm going to put veggies on it will be something like hatch chilis. Fuck mayo or any of its derivatives. I might dip a lower quality burger in a sauce, but usually don't like anything but meat, cheese and bacon.

Not one of those are surprising. Every one is a conventional combination of ingredients. Whoever made that image does not know what surprising means. Surprising would be Ritz crackers + frozen peas + a can of cream of potato soup. Not shit you can order at any burger joint.

If make the aioli yourself it uses the same emulsification as mayo without being a mayo derivative. Alternatively, cook your yolks so your sauce is silky like hollandaise. I serve my venison burgers with sauteed pepper and mushrooms, watercress, thick cut bacon, smoked Gouda and a port wine aioli (which I use the hollandaise method to make).

Sounds good, I just really don't like any of those egg based sauces. Probably some sort of Garcia taste aversion thing. Watercress an interesting idea, but mushrooms are another of my hard no's. What kind of fat do you add to your venison?

I'll usually grind it with a little bit of pork back fat. About 90:10 because I like to add fatty toppings.

First I like to toast my buns. I butter the burger buns and then grill them for a very short while on a sprayed down pan.

Once that's done I like to rub a lot of salt and pepper into my patties. If all I have are frozen patties I put them frying pan first and let them warm up before sprinling the salt and pepper on the meat, flip it over, and repeat on the other side.

Moment before I take the patty off the pan I put on a slice of American cheese so it will melt on top. The topping are entirely up to you.

Oh, also put a lid on the pan so the air isn't completely filled with grease.
