its good and easy to make. a classic meal for christmas. leftovers last well, go on sandwitches or with potatoes.

It's lean beef, seared and cooked medium rare (well not OPs, but generally). Do you like beef medium rare?

go to any deli and get roast beef. It has white streaks. Because its cold. Fat turns back white when it is cold. The pic i posted is not from the oven. Its from the fridge. Not hard to understand.

You would use a low temp to dry out some foods. That's all I can think of but by definition that low temp isn't roasting.
