Panang curry with chicken breasts, potatoes, carrots, onion, green bell pepper, spinach, and garlic.
The panang curry paste is from Mae Ploy and cooked with coconut milk. The carrots and potatoes were boiled in salted water with some white vinegar (helps maintain shape and allows for even cooking), with spinach added at the end of the boiling process.
What goes in the pan in order: olive oil, curry paste, crushed & diced garlic, onions, chicken, coconut milk, bell peppers. Remove the spinach from the pot and put in bowl. Strain and add the boiled potatoes & carrots to the pan and cook for another minute or two.
One of the healthiest dishes I know and hits most of my vitamin/protein targets.
I usually end up pouring the water into the bowl even though I know curry is supposed to have a thicker consistency. Doesn't matter to me and I can minimize nutritional waste. With the white vinegar and the taste of curry, it's almost like a mild hot & sour soup.

P.s. side note, this isn't actually a poverty post. My mom used to make this for me as a kid and I had a random craving for it. Also yes I own furniture but on a chilly Saturday morning I usually sit on a bunch of pillows and blankets on the floor in front of the coffee table. Sue me, it's comfy.

Yes. There are ways to get around it -- You can either buy a share of a cow, or buy the milk "not for human consumption." Still, its hard to find. Sad as it is so delicious and good for you.

The aubergine and mozzarella together have a comfy meaty taste and the tomatoes provide a pleasantly refreshing contrast - 8/10 would eat again
