While I'm novice at bread making, I'm pretty good at making latkes. Might to a thread on it later

next time let it proof after braiding it. also the nicer looking(smoother) the strands you braid are, the nicer it'll look like once it's risen

I did let it proof a bit; I let it 2x in size in the big pot, then I kneaded it some more, braided it, and gave it a preliminary egg wash. Then I waited another hour, gave it a 2nd wash, and stuck it in the oven.
next time I won't do two loafs at once. My oven can't fit both side by side, so one was on the bottom "shelf" which apparently isn't the best for bread.
Next time try making superior water challah.

It is. The taste is so much better, the crust is so much yummier and crunchier in water challah.
The only thing water challah is worse at is staying fresh. It goes stale fast.
