Ya pounding them is good so they cook evenly.

you need to make that cheese more browned. broil them for 5 minutes.

Parmesan does not melt. It's kind of a misnomer because most recipe use mozzerella anyway.

the parm is cooked into the breading of the chicken. At least that's how I add it.
