I did 325 for 3 the other day. I was shaking a lot even though I got the weight up really fast and I want tired. I've never shaked before on deadlifts. I got 315 for 3 5 weeks ago with no shaking at all and 325 isn't much more weight, does any body know what's going on?

When you're doing near maximal weights, you have to be on. It could be as simple as you getting less sleep the night before, or having eaten differently, or whatever. Any small variable that reduces your output will be noticed.

I have pretty severe cartilage damage in my right knee (and just got surgery to mitigate it), and pretty bad damage in my left knee. Doc says if I don't want to have arthritis in 5 years that I have to stop running and doing any high weight lifts that involve my knees. Shit sucks. I do what I can, but even my best efforts make me look like I skip leg day.

When I was younger I used to "crack" my wrists, my doctor warned me that I would have weaker grip strenght due to that, but I didn't care.

Anyway, to answer your question, deload to as heavy as you can do a full 5 reps without your grip failing, and do a static hold at the end of the last rep. Hold it for as long as you can, only putting it down when your grip starts to wane. This transforms your deadlift into a grip exercise in addition to everything else it trains.
Heavy-ass Farmer's Walks are also good for training grip. Doing pullups with just your fingers (if you're able to do that) is also great.
Don't expect results overnight though. You gotta gradually train it just like everything else.
If you want to keep pushing up your deadlift weight in the meantime, warmup with normal grip (using your max with normal grip as part of the warmup) and then switch to hookgrip for when the weight is too much to handle otherwise.

315 same as my squat. I do mine double overhand which is why it's so low. Veeky Forums has scared me from ever using hook grip since seeing the plethora of bicep tendon snapping videos. Also is it normal to feel physically stressed out after a couple of weeks of heavy lifting? I'm cutting and weight is either going down or barely I'm just barely able to keep it at or close to my 1rep max. I'm deloading this week and hoping it helps.
Last time I deadlifted was doh at 290 for 5. I didn't like my back rounding on the 3rd rep so I stopped. Think it rounded on the 4th too
Now I do rack pulls with the bar just below my knees. Got to 375 with straps. Did 365 with mixed but terrified of bicep tears. Think I could probably do 400, but I want to take it slow and safe.
Also I think mixed is easier than straps to hoist the weight up, but it's scary so no

Holding your last rep of the day for as long as possible is best grip strength builder. Never have any issues with grip it's great.
I did a 1rm of 300lbs and I can do a set of 5 at 275lbs (185lbs, 6'2" trying to leave hungry skelly mode)

Is it normal if I don't ever feel the 'burn' in any muscle group when doing deadlifts?
When squatting, I can feel my quads heat up, and glutes in a smaller way.
When benching, I feel my pecs.
When doing OHP, I feel my shoulders.
But when deadlifting I don't feel any muscle bearing the load.
I just feel increasingly tired all over with every rep, but it's like no particular muscle is performing the exercise and more like the bar is magically sapping my strength from my whole body.

People usually warm-up and gradually go up in weight after they hit 2pl8, but damn, they usually do like 3 reps per weight increment, because your body is already plenty warm from the rest of your exercise, and deadlifts should always be done at the end of your lifting day.
You do cardio-tier amounts of reps for maybe the most un-cardio-like exercise there is.

Low amount of reps is purely for strength, but I have a well trained back. Especially my lower back due my deadlift routine.
Moreover I love it. The way I do deadlifts I get dizzy and it feels like being alive & borderline dead. It's so fucking exhausting.

I'm a shit deadlifter relative to my squat, which is 425. I see guys who Squat 3plate and can out DL me by 100+lbs. My form must be holding me back.

If you're doing 4 sets of 5 across on the diddlylift you're not pulling anywhere near your max, newfriend.
Seems like a lot of reps warming up. And you back off really hard to a weight that isn't very challenging. If you're pulling 220kg then 130 isn't going to be giving you much stimulation.
If I had to take that workload and adjust it I'd probably do something like:

160 x 3
190 x 1
220 x 1
200 x 3 x 3
160 x 10
