Cracking the pepper yourself can be a chore. It definitely was for me. Use regular fresh black pepper in a slightly higher amount if you want to skip it or use cracked black pepper from the store. Slightly higher amounts can help compensate for lack of freshness. Otherwise the short rib was phenomenal. I used a cabernet instead of chianti, but it is a dry full bodied red. Works well for cooking.
so long story story short. It's just a wine braised short rib with garlic pepper paste. Nothing advanced at all. The cider braised pork cheeks episode, or any short rib based recipes are equally as easy. They're nearly impossible to overcook and all the prep work is very simple if sometimes tedious. At the end of the day they're techniques and not recipes. If you think short rib is too expensive to try, buy a chuck roast and cut it into 2 inch cubes. That would be a more traditional choice of meat for peposo anyway.
